A non-pretty mobile photo of miso-glazed courgettes.
I follow regular recipes, but then freehand the glaze because I don't have mirin anyway (and it's sugar), so it's miso, vinegar, soy sauce/salt, and yesterday I added MSG for the first time.
An interesting observation is, this food fools my non-vegetarian body into contentment with a vegetarian meal better than anything tried before. Unlike, say, lentil patties that I expected to see this effect from.

First attempt at making miso soup. Was pretty scared so eased off the spiciness, so it could have used a bit more flavour. Was a pretty light/orange miso.
I have enough chicken stock for a second attempt tomorrow as I only made a small portion (had some left over stew as well).
Looked good and tasted just fine with broccoli, green onion, ginger, garlic and a bit of chili. Added some wheat noodles as well cause I love noodles.

This sort of mustard+chilli+coconut paste (sometimes with ginger too) shows up a lot in #Bengali #cooking - even with fish. Less traditional is my use of a touch (tsp) of (white/shiro) #miso in the paste. I like the subtle depth (#umami ) it adds without changing the flavor. (Yes I do this with Bengali fish dishes too)

I have deeply loved Japanese miso soup / miso jiru from the first time I tried it.
Miso is a fermented soy bean paste that is sometimes made with other beans and/or additional ingredients. The fermentation process makes the protein in miso easy to digest and absorb. Good quality miso is a living probiotic food.
I love the taste and I also really like the way miso soup feels in my stomach and in my body. 1/n
