- Wholemeal rye flour
- Wholemeal oat flour100% hydration
10% extra virgin olive oilAmazing scent and flavor, derived in particular from rye, which gave this focaccia earthy and honeyed notes, while oats smoothed the edges with its sweetness, rounding off the flavor.
A dough that is technically difficult to manage due to its high hydration with very low gluten flours (rye) and gluten-free flours (oats).
Very delicate even in the double phase of leavening, with perfectly marked times to prevent it from becoming sour.
Gentle and prolonged cooking to dry the internal humidity.

Where are my gluten free vegans? Any tips? Any ready made items appreciated, as always low on spoons, but happy to try and make as well.
I was tested for coeliacs a few years ago, which was negative. But I’m having a reaction to something, or a lot of things, and think low gluten might help.
I’m looking for bread, crackers, pastry mostly. Which is the best supermarket for vegan and gluten free?
