Had a busy day making some low Fodmap, gluten free baked goods.
Bread came out much better this time. Once its cooled down, I'll give it a try.

Very busy afternoon cooking, for what feels like very little: a butt tonne of hone made granola, some banana and oat breakfast bars, and tomorrow's lunch, a goats cheese and spinach tart.
Although, I feel the dish for the tart was entirely too small. About a third of the mix wouldn't fit. So that became lunch.

Gluten sensitivity: It’s not actually about gluten
https://www.unimelb.edu.au/newsroom/news/2025/october/gluten-sensitivity-its-not-actually-about-glutenLead researcher, University of Melbourne Associate Professor Jessica Biesiekierski, says there's a popular belief that most people with non-coeliac gluten sensitivity are reacting to gluten when it's far more likely they have a sensitivity to FODMAPs (fermentable oligosaccharides, disaccharides, monosaccharides, and polyols). She also highlights the importance of the gut-brain axis.
Associate Professor Jason Tye-Din, Director of the Snow Centre for Immune Health and a gastroenterologist at the Royal Melbourne Hospital, said: "This review supports a more personalised, evidence-based approach to gut health and avoids unnecessary dietary restriction."
IMHO, it would be a more helpful and accurate representation of the article if whoever wrote the headline stated that gut sensitivity is not always about gluten. Putting aside my concern about clickbaitism, the article itself is excellent, and very much in line with my own reading/research and personal experience with food intolerance that leads to gastrointestinal problems.

Part of the reason I’ve been quiet here is because I’ve been struggling with idiopathic #Neuropathy and #paresthesia for a while now.
Numb and sometimes painful hands and feet. After 2 MRIs, spinal tap, EMG, and at least 4 rounds of blood tests I can give long list of what it’s not. No MS, Lupus, Lyme, and neg for a lot of auto immune disorders. Never had COVID.
Now on Wahl’s Protocol which is kinda #LowFodmap meets #paleo. Not helping but never ate healthier in my life.
Anyone else?

🌱CHICKPEA CURRY with KALE (for gut health)🌱
This chickpea curry is a gut-friendly, low FODMAP recipe that tastes delish! 😋
Did you know that chickpeas are high in dietary fibre? Various studies have found that eating chickpeas can help make bowel movements easier and more regular. They're a good source of protein, carbohydrates, manganese, folate, iron and phosphorus. Plus this dish includes the wholesome nutritional goodness of kale, tomatoes, ginger, greens of leeks (the dark green top part of leeks are low FODMAP), tahini and brown rice.
👉Full recipe: https://veganeasy.org/recipes/chickpea-curry-with-kale/
(OR see below👇)
⇨ INGREDIENTS (serves 3-4)
🌱 1 tsp olive oil
🌱 1/2 tsp fresh or dried chilli (use more or less depending on how spicy you’d like it)
🌱 thumb-sized piece ginger
🌱 1 Tbsp curry powder
🌱 4 medium tomatoes, diced (about 500g/18oz)
🌱 1 Tbsp tomato purée
🌱 50g/1.8oz greens of leeks
🌱 1/3 cup low sodium veg broth
🌱 1 Tbsp tamari sauce
🌱 1/2 tsp coriander powder
🌱 1 tsp garam masala
🌱 1 x 425g/15oz can chickpeas, drained & rinse
🌱 50g/1.8oz (2 Tbsp) tahini
🌱 100g/3.5oz kale (de-stemmed), chopped
🌱 Handful fresh flat parsley and mint, plus extra to garnish
🌱 Lemon juice, 1/2 Lemon
🌱 To serve: cooked brown rice⇨ INSTRUCTIONS
1. Prepare all the veggies. Grate or finely chop the ginger and chilli (if using fresh). Dice the tomatoes. Chop the leek greens into small pieces. Drain and rinse the canned chickpeas. Roughly chop the kale and finely chop the fresh parsley and mint.
2. In a large saucepan on high heat add the oil and fry the ginger and chilli. (If oil free, water-fry the ginger and chilli). Add the curry powder and stir quickly for a few seconds then add the leek greens. Stir for about 30 seconds then add the diced tomatoes, tomato purée and vegetable broth. Mix well. Bring to a boil.
3. Lower heat and cook on a low simmer for about 10-15 minutes. Stir occasionally. (Start cooking the rice while curry base is simmering)
4. Add the tamari sauce, garam masala and coriander powder to the curry base. Stir, then mix in the chickpeas and kale. Simmer for about 5 minutes until reduced down.
5. Taste the curry and add more tamari if desired.
6. Stir in the tahini, then add the fresh herbs, squeeze the juice of half a lemon into the curry, mix and turn off heat.
7. Serve with rice and garnish with extra herbs.😋🌱

@hauchvonstaub Interesting. I don't hate either, but as of a few years ago i had to get on a #lowfodmap #glutenfree #lowfat #lactosefree diet. I used to enjoy just about everything and now it all wants to kill me from the inside.

Irritable bowel syndrome (#IBS) and other #digestive disorders and symptoms can keep us from obtaining proper nutrition.
Thankfully, companies such as FODMAP Foods LLC are creating products to help those of us with sensitive digestive tracts, and the products are not only #gut friendly and #Monash University lab tested and certified as #lowfodmap , but they are delicious as well!

It's mind boggling how many people I know who are all suffering from severe bloating, severe constipation, issues with their gut "microbiome", pelvic floor dysfunction, and or gastrointestinal issues overall. It seems like a recent phenomenon for particularly women in their early 30s. People are getting a "SIBO test", to test for a bacterial issue, then have to take antibiotics and go on a strict diet, called "low FODMAP". Very alarming..

What's your favorite #LowFODMAP #recipe website? We had luck with fodmapeveryday before it got absolutely enormous. Most of the recipes feel a bit to complex for a quick dinner these days (even the "easy" ones).
