Black lentil salad:
English cucumber, 5 Roma tomatoes, 1/4 of a red onion, all chopped fine. Add frozen peas, 2 cups cooked beluga (=black) lentils, a tin of garbanzo beans, and a lot of fresh parsley. Dress with balsamic vinaigrette (3 parts olive oil, 1 part balsamic vinegar, a bit of lime juice, pepper, adobo, garlic powder, some Italian spice. Shake well).
The salad is best if it marinates an hour before eating, but really, who can wait? #recipe #LentilSalad
