You ever have one of those days where you try something new in the kitchen, and end up just hitting it OUT OF THE PARK somehow? That was today for me.

I had a ton of lentils in the fridge that needed eating up, so I processed them into veggie "meat" balls, fried them up, and had them with leftover naan and a little plain yogurt. The bowl on the bottom here has a kale/cabbage salad with ginger dressing, cut up halo mandarins, and pecans from my tree outside. It was amazing.

Apparently they're called that because they're shaped like lentils. I didn't make that up.

Accidentally made two vegan suppers in a row. This chickpea curry was delicious. But, the lentil flatbread was the thing I was most excited about. First time making it and, wow. It was amazing. Plus it was three ingredients. Red lentils, water and salt. I will be making this again.
