Our green beans are producing so heavily now! We do a combination of blanch & freeze & lactofermented dilly beans.
The jar on the counter is from last year, found tucked in the back of basement-fridge aka fermentation-fridge. They are still crispy & salty & wonderful.
On top of our woodstove is my fermentation station. 3 quarts of dilly beans, garlic basil paste, & chimmichuri paste.

Fermentation station is back!
This time, we've got: carrots, cabbage, leeks, chili, onion -- some have bay leaves in (for tanning to keep the vegetables crunchy during fermentation). Other jars have mustard seeds, whole black peppercorns.
The saline solution is 3.5% by weight, slightly higher than usual, but some of the softer vegetables (chili) need that to prevent kahm yeast from forming.
This should be fun!

When life gives you cucumbers...
Repurposed a glass drink dispenser as my pickling crock for 25 cucumbers. These will ferment in a salt brine for 4-6 days until done.

@amorris Made sauerkraut for the first time last year. I wasn't expecting to like it - I made it for my spouse. But it's soooo good. Makes a good crunchy addition to sandwiches if you don't have lettuce handy. #lactofermenting FTW!

Also did some experimental cucumber #lactofermenting too.
Just halved slices, with a few herbs and salt. It also bubbled its way through a few days, so I've put a lid on it and into the fridge.
Perhaps will try it tomorrow after a good thorough chill through.
