This weekend, weather is predicting a hard freeze. We covered our peppers a few weeks ago with row cover & they survived the light frost we had, but a freeze is a different story.
I picked about 8 pounds of mixed peppers - mostly serrano, but some green bells & shishitos.
4 lbs got chopped & simmered in a mix of apple cider vinegar, sugar, and spices to make another batch of Cowboy Candy (candied peppers).
11 half-pints cooling on the counter.
We eat these with cheese & crackers, sprinkled on pizza, mixed in with cornbread, & mixed with cream cheese or chevre. The mix of spicy & sweet is perfect.
