  2. Another naive #millet experiment: kodo millet #congee (20g millet, 270g water, 30 minutes). It absorbs SO much water! Hard to believe it will absorb 12--15 times its own weight - you'll think the measurements are wrong, but no!
Tasting notes: plain #kodo really tastes to me like pudding rice. Against tamarind, it highlights its sweetness. Against kimchi it's just bland/tasteless. Against sweet chilli sauce, it's nutty! #kitchendiary #iym2023

  3. I finally found some kodo millet in a shop! Now - what shall I make with it? #iym2023 #millet (cc @LifeTimeCooking ?)

  4. #kitchendiary: This sweet millet porridge is a nice breakfast archive.ph/WKoJT The sweetness of cardamom and toastiness of the toasted almond flakes complemented the flavour nicely. #millet #iym2023

  6. Our next #millet experiment: "Millet Masala Khichdi" using this #recipe millettable.com/millet-masala- -- It's like dhal, combined with grain to make a one-pot Indian midweek meal. Very dhal in texture, unlike if we'd made it with rice. #iym2023 #vegetarian @vegan #kitchendiary

  7. @Lorrrraaaaine We made the pilaf tonight. It was OK, a decent balance of flavours - next time though I'd roast the squash instead, to give it more flavour. #kitchendiary #millet #iym2023

  8. Millets are sustainable, nutritious & resilient crops that are primarily grown in Asia & Africa.

However, millets are often under-valued as a food source. Discover 6 reasons why millets deserve our attention.⬇️
