  22. Another naive #millet experiment: kodo millet #congee (20g millet, 270g water, 30 minutes). It absorbs SO much water! Hard to believe it will absorb 12--15 times its own weight - you'll think the measurements are wrong, but no!
    Tasting notes: plain #kodo really tastes to me like pudding rice. Against tamarind, it highlights its sweetness. Against kimchi it's just bland/tasteless. Against sweet chilli sauce, it's nutty! #kitchendiary #iym2023
