Good Mac app layout design also lends to the task at hand. Each app is uniquely designed to tackle something; each with its own mental model.
Today's apps have a one-size-fits all across their desktop, tablet, and mobile counterparts and all have a left-navigation sidebar for some damn reason. Basically, today's app design has been reduced to the most common denominator across all platforms.

The amount of time I spent on my iWeb-website was unhealthy. I had a lot to say back then (go figure). Man, I miss this app so much.
I also remember the HUD-style panels (3rd picture) back in 2006 was so futuristic and so cool looking.

Also, iLife '06 had my absolute favorite splash screens (for some) of its apps –– which makes sense why only these had it. But damn, they're so beautiful. You just want to click each button.
Couple things I appreciate: Help buttons were purple and should always be purple and the inset appearance of the Quit button. Historically, Aqua buttons would protrude but these were nice and inset.

Whoever created these graphics knocked it out of the park. You knew you were installing high-quality, high-production-value apps onto your beautiful Macintosh.

…and they certainly were _not_afraid to have fun. From the fun equalizers, visualizers, and the pulsating "radiation trefoil" symbol for burning CDs. Because the awesome act of "burning" your own CDs demanded an equally awesome UI.

I miss how #MacOSX apps from back in the day weren't afraid of UI... yes, UI. Look how they put important things within reach specific to each view -- like the top toolbars in Videos & Music Store or the bottom bars for Podcasts & Party Shuffle. It used to be about “simplicity” and not "minimalism."
