    It was a busy day; we swap fall/Thanksgiving decorations for Christmas, which is a mighty chore. I was pretty tired by mid afternoon.

    I browned the roux up in a T-shirt and shorts, with flip flops on my feet. I usually take a little more care when stirring Cajun napalm. No harm done.

    Delicious batch. Shout out to Jacob’s Andouille for the sausage.

  16. Os fotografío los ingredientes, por si queréis hacer #gumbo pero no tenéis los botecitos. El potingue tiene que hervir flojito media hora o así. Mientras tanto, pelamos y troceamos las gambas y la ostra, que yo he sustituido por raya porque PASTA.

  18. Y ya casi está el #gumbo. Se le echa la gamba y la «ostra» (mucho más barata en Luisiana que aquí), se apaga el fuego y se deja reposar unos minutos antes de servir, acompañado de arroz blanco y laurel en polvo. ¡Listo!

  20. El siguiente paso es echar al #gumbo la carne de cangrejo y la pechuga de pollo y la salchicha andouille troceadas. Como no he encontrado esa salchicha criolla, lo he apañado con una longaniza y un chorizo, ambos picantes :)

  21. Echamos al #gumbo caldo de pollo (en mi caso, de brick), el de pescado que hemos hecho, media lata de birra (la otra media, al gaznate), dos hojas de laurel y una guindilla si son cañeras, dos si no. Subimos el fuego.

  22. Y ahora viene la jugada cajún: hay que echar al #gumbo especias criollas e ir probando hasta notarlo en el punto de sal. A mí me gusta mezclar normales y picantes de Tony Chachere, que son las que me recomendaron en Nueva Orleans.

  23. Cuando esté más o menos del color de la primera foto, se le echa el pimiento y el apio y se le baja el fuego. Ya tenemos empezado el #gumbo. Vamos removiendo de vez en cuando mientras troceamos la cebolla y el ajo (yo lo he comprado tierno, pero al gusto).
