Spent most of the late morning and early afternoon working with hand-cut #ice for #cocktails. Train a couple different new techniques.
Does anyone out there have a good system for keeping hand-cut cubes approximately the same volume?
I'm also conducting an experiment to see how the concentrated solids in the water change during the ice forming process.

I think I may have finally found a substitute for egg white in cocktails that actually works. Pretty good foam, at least initially; completely neutral flavor, as far as I can tell; and good mouthfeel.

For the record, cocktail people, I like White Russians.
It's not my favorite drink, but I like them. I know that most of you think they are unbalanced, constantly in need of modification and improvement, and such, but I still like them in their basic form.
