    I can think of one reason why a company that makes a living by substituting fat, salt and sugar with starch, calcium lactate/citrate and acesulfame might want to call for higher taxes on more conventional ingredients. What I can't work out is why the Guardian has chosen not to mention it.

    In the meantime, this wheeze might best be served with a bucketful of salt.

    Tonight at dinner, emulsifiers came up as a topic of discussion. 7 yo provided a definition, clearly knew what they are. She learned about them on her own, from a book or podcast.
