A little history about Eevee: The English version was going to be renamed 'Eon', and it's pretty obvious if you look at the other 'Eeveelutions' see Vaporeon (Showers), Jolteon (Thunders), and Flareon (Boosters), but they decided to keep the Japanese name for an unconfirmed reason.

For the date 11/21, because of how Japanese puns work, and multiple pronunciations and words for the same number, 1 is ichi (i) and 2 is futa (bu):
1 -> イ
1 -> イ (a double of the same character be substituted with a dash)
2 -> ブ
1 -> イ
So it's イーブイ, iibui -> Eevee!

I really like the B Side Label design that says 可能性は無限大, which means Infinite Possibilities.

Expect lots of Japanese Eevee posts on in usual places since for the next day or longer because time zones.
