Here's my hard-cooked chopped egg, seasoned, with flakes of dried parsley and oregano visible.

Cook until whites are done or mostly done, then break the still-soft yolk and mix all together.

I don't stir; I use the spatula to chop it all together, mixing as I go.

Any method of mixing works and experimenting with the level of doneness of each stage can yield different results suitable for varying purposes.
