A look into Agave production, but not in Mexico, in India.
Few agave plant farms exist at this point, so it's up to scouts to find blocks of plants used as hedgerows, or growing wild, to harvest.
Like with winegrapes, timing of harvest is critical to yield and quality, though I think hand harvesting grapes is easier!! :-)

I added about a tablespoon of blue agave syrup to my last loaf of sourdough bread. Even though the syrup doesn’t look blue, after baking my loaf had a blue hue. @sourdough2021 Some kind of chemical reaction? The loaf has my harvest grain mixture, pumpkin and sunflower seeds and walnuts #sourdough #science #agave #BlueAgave
