  1. Making sambal from scratch.

Should have been obvious, but 10x chili pado & 20x dried chilis makes for a tear inducing kitchen, even with the fan on full.

  7. Made keema with carne picada para tacos, which translates to minced meat for tacos. It is precut meat from the local Mexican butcher, with a much better texture than ground beef. Not pre-seasoned. Will definitely do this again. #AmCooking

  9. Ended up with an extra 2lb of "use tonight" ground beef from Dashmart I guess b/c they wanted to be rid of it so trying these stuffed peppers I've heard about round these parts. Had extra stuffing guess it can be pasta topping later? #AmCooking

  19. Made chili oil with Chile Nuevo Mexico & Chile Negro. The color is gorgeously dark. But the spice level is … not much. Time to make batch 2 with something spicier. #AmCooking

  26. Homemade guacamole with homemade chili oil (la yu). The chili oil was made with chipotle peppers, so this is more on the Mexican side of fusion cooking. #AmCooking

  28. Made (pseudo) hummus with Peruvian beans instead of chickpeas. Technically, this is not hummus because hummus = chickpeas in Arabic. Yeah, whatever. It’s mashed & blended frijoles peruanos with tahini, garlic & oil. Had not considered but there is a LOT of it. #AmCooking

  30. It was time to make some Stromboli (my version anyway). Fresh-made, seasoned dough, pepperoni, salami, provolone, and marinara layered, rolled, and baked to golden brown.

  31. I'm looking at an Australian recipe card from the grocery store that lists "All-American Spice Blend" as an ingredient and I am both fascinated and terrified.

What is an "All-American Spice Blend"?

  36. Cooking for the week. Marinating a steak in Pakistani spices, for tomorrow. About to cook 1. salmon & red trout, which look very similar. In Indian-ish spices. 2. Broccoli with cumin seeds & mustard seeds, my new go-to method for roast veges. 3. Korean-inspired soft tofu soup. #AmCooking

  38. It’s such a simple dish but it’s one of my favorites. #AmCooking

    (1) Boil 5lb bag of russets

    (2) Chill potatoes overnight

    (3) Shred into greased casserole dish interleaving layers of a few butter pat smears and cheese (we use plant based butter and Violife cheddar shreds—dairy free for wife’s benefit—totally can’t tell difference from real cheese)

    (4) Bake at 375 for one hour

    (5) Profit!

  42. We're feeding some college-age kids who moved into the apartments recently and who don't have all their kitchen gear yet. One is from Canada. The other is from the midwest USA.

They've asked for macaroni and cheese to be part of dinner.

... suggestions on what to serve with it?

  47. Made chana dal last night with a recipe for black eyed peas. But an Indian recipe for black eyed peas. Why? Because I don’t have black eyed peas. I “don’t like” them. Makes me wonder if I didn’t like the bean or the prep method. Probably the latter. #AmCooking
