  5. #Sorghum and #AfroCulinary #Futurism: #Decolonizing an #AncientGrain Fueling #SustainableAgriculture

By Stephanie Teasley, May 28, 2025

Excerpt: "Sorghum is a versatile, gluten-free ancient grain from Africa. It can be enjoyed in various forms, such as whole grains, sorghum flour and syrup, and is also utilized for animal feed, ethanol production and alcoholic drinks.

"Sorghum is also known by several names: #GreatMillet, #broomcorn, guinea corn, #durra, imphee, #jowar and #milo. It’s the fifth most significant cereal crop, following rice, wheat, maize, and barley. It grows in clumps and can reach heights exceeding 13 feet despite its small grain size, which ranges from 0.08 to 0.2 inches in diameter.

"Chef Bashir regards Afro-Culinary Futurism as a crucial avenue for the future of African and diasporic cuisine, particularly emphasizing sustainability and innovation. He notes how sorghum is a perfect case study for this vision as, beyond the grain, it also offers medicinal, nutritional, and economic value.

" 'Botanically, every part of the sorghum plant has a purpose. While its grain is consumed in porridge, sorghum flour and flatbreads, its stems and leaves can be used as biofuel or #CoverCrops, enriching the soil and aiding #SustainableAgriculture .'

"He continues, 'Another example is how communities in #Ethiopia and #Eritrea ferment it to produce a beer-like drink, demonstrating the versatility inherent in African food traditions, much like the diverse applications of potatoes or onions in Eastern European moonshine production.

"Our ancestors did this, and African communities have long known these uses, far beyond what modern food systems recognize.' "

  6. How to Cook with #Sorghum

"Have you tried cooking with sorghum? This grain has been around for centuries, but it’s recently started to become popular in kitchens across the United States. You can find it alongside grains like bulgur and quinoa at your grocery store.

"Sorghum has a slightly nutty flavor and goes wonderfully in a variety of dishes. If you’re new to this grain, you’re probably wondering how to cook with it.

"There are two types of sorghum that can be used for cooking: grain sorghum and sweet sorghum.

"Grain sorghum can be found as a flour (great for baking!), whole grain and pearled (with the husk removed) grain. Both whole grain and pearled sorghum look like large versions of couscous or quinoa, but the whole grain version is slightly chewier when cooked because it still has the outer husk.

"Sweet sorghum comes in a syrup that has a rich, umami flavor that is sweet and nutty with a lot of depth. A lot of people compare sorghum syrup to molasses because of its dark color and bold flavor.

"Before we get started on how to cook with sorghum, let’s talk about why you should cook with it. After all, it can take a big nudge to step outside of our culinary comfort zones. It can be scary to try something new in the kitchen over a tried-and-true recipe. Here are some great reasons to give it a try!"

  9. 📰 Study Shows How Imbalanced Fertilizer Use Can Halve Critical Fungi

🥼 A 70‑year field study shows how imbalanced fertilizer use can halve mycorrhizal fungi, the very partners that help crops access nutrients and withstand stress.

🍄🌾When potassium is low and nitrogen is high, plants lose about half of their fungal allies, weakening long‑term soil health even if yields look fine in the short term.

🤝 This is more evidence of the problems with fertilizer use and supports sustainable agriculture where soil fertility can make farms more resilient to drought, pests, and nutrient volatility.

  12. From Uganda to Europe, learning for our community

From Uganda to the Netherlands and now Germany, Ethan’s journey is creating new opportunities to connect, learn and share.
Today, he met Korinna, who is hosting him at the University of Hohenheim, where he will soon have a seminar with university students and share experiences from our work in Uganda.

We are proud to see our values of youth leadership, sustainability, education and community development reaching beyond our borders.

Most importantly, this journey is not only about Ethan. We hope the knowledge, ideas and connections he gains will come back to Uganda and help us strengthen our farming activities, school projects, youth skills and food-security work in our communities.

Thank you to everyone who believed in us and supported this journey from day one.
