I've never heard "Coke" used generically to refer to any other soft drink, anywhere in Canada. And I've been to most parts of Canada...
It was my understanding that this usage was from the deep south of the USA - probably specifically Georgia, where the Coca-Cola company is headquartered, if I had to guess.
"Pop" was common, enough so that one big Canadian company was The Pop Shoppe, which sold their own-brand soda in dozens of flavours from their own franchised stores rather than other retailers. It was a common ritual to take the kids down to the store on the weekend and let them pick out flavours to fill a case with.
