I’d like to fuss over properly calibrating my turntable — I think it’s a touch slow — and give the Kidd Video album another pass at digitization, but goodness knows when I’m going to have time for that. So what I'm currently working on is passing as much of the color information from the US version on to the dub version without actively degrading it's quality.
When done correctly, you get outcomes like below - left side is uncorrected dub footage, right side is the dub footage corrected with some of the color info from the US version.

That said, the biggest problem I'm running into is that I suspect that the Spanish Dub that I'm working with was made for PAL regions, which is (probably) why it's blue and desaturated compared to the US footage - left is the US footage, right is the dub footage, you can clearly see the difference in color space between the two of them.
