    Making Top Sirloin Fillet Organic Grass-fed Black Angus Steaks in the sous vide for Valentine's Day.

    Because I always experiment in the kitchen, I'm also attempting sous vide green beans, at 150F for a longer run, so that I can run the steaks in parallel.

    Any guesses on when the green beans will be done?
    I'm thinking 2.5 hours.

  6. Details are everything.
    The sole difference when making Indian Paneer versus Mexican Queso Fresco is 30°F in when you add the acid to the milk.
    The chemistry at the two different temperature is so profoundly different that they both have different cooking and melting properties once completed.
    Paneer is harder and resists melting and the Queso Fresco is soft and melts (think quesadillas).

    I made this recipe last night, and it came out perfectly. I haven't run across many recipes that didn't need to be adjusted in some way, so this one is exceptional. Made "mild" by our standards for the kiddos.

    Basmati rice and naan. Ten servings for $40. Normally, this is a $15-18 plate in a middle of the road restaurant.

    I'm trying out a new recipe. I'll let you know how it pans out for me. My issues with milk seem to be with the biology that comes along with it. I eat this dish in the restaurant and it hasn't killed me. I also think that the longer you stew/brew/simmer the sauce, the better for me. Breaks down the lactose and kills any other biology that came with the yoghurt and cream.

  12. Was staying at a very small "resort" of sorts near Kathmandu a few months ago and the chef was just a delightful chap and one afternoon I stayed in rather than taking a hike in the hills so he asked if I wanted to photograph him making some momos for lunch. That made me very happy!

  13. Sweet mace seems to go by many different names and has both medicinal and culinary uses. I have had a plant sitting on my kitchen bench for the past week.

    #InTheKitchen - The leaves have a tarragon-like scent, with hints of anise, and can be used with tarragon (for a layered flavour profile) or instead of tarragon.

    #Also - apparently a robust tea acts similar to the caffeine in strong coffee (can't wait). The leaves were an important flavouring for chocolatl, the cocoa drink of the Aztecs.
