    Sin buscarlo encontré en Consum una bandejita con guanciale, cortado en bastoncitos, que -evidentemente- casi me gritaba "Llévame", y yo soy muy muy obediente 😇

    No tenía pecorino así que utilicé parmigiano, y sinceramente quedó para chuparse los dedos.

    The first piece of guanciale is ready. It is the thinnest one and already lost just over 30% of its weight. It also was on the higher hook which gets more of the air flow from the wine cellar refrigeration unit. The two thicker pieces look like they will probably need another week and the other thinner piece maybe 3-4 more days.

    I’ll call this another success.

    Might try to hang them somewhere else in the cellar away from the air flow so can cure a bit more slowly just to compare.

    They have finished their dry brine, had their bath in white wine (found a bottle of Chilean Sav Blanc for less than $9) and now hanging out in the wine cellar for about a month. Wet weight over 2kg. They will go on a 30% reduction diet while they are hanging.

    Two of the cheeks doused with salt and herbs. Added cinnamon, allspice and nutmeg to the other half of the mix and trying the other two cheeks more like that lardo recipe.

    One week of dry brine, then a bath in white wine, and then about one month of hanging in the wine cellar.

  12. CW: Discussion of food

    Got four pig cheeks from the butcher so I can make guanciale again. Last time was an absolute success. Drying rosemary and sage from the garden in the dehydrator so should be ready to use tomorrow or Sunday. Then a long month of waiting. Took the last piece of the previous batch out of the freezer and going to make pasta carbonara tonight with home made pasta. Haven’t used the pasta machine for ages. Time for a workout.

    Trying my hand at home cured guanciale. Local butcher was enthusiastic to provide me nice pig cheeks

    Salt, pepper, garlic, rosemary, sage - for a week
    Then wash in white wine to then hang for probably four weeks.

    A beer kegerator will be converted into my meat curing station.

    I censori della cucina non aiutano gli insipidi pardon insipienti ad elevarsi verso la bontà della #cucina. In questo caso era forse più saggio uscirsene con cose tipo "la #pancetta è troppo salata" o con "difficilmente la pancetta ha il giusto rapporto fra lardo e carne che ha il #guanciale". Li devi educare, non punire, altrimenti per reazione ti vanno al #fastfood
