    My lunch.

    Wild caught salmon topped with fresh rosemary and fresh basil; and fresh vegetables all from a farmer’s market in Lambertville.

    I put some apple cider vinegar and olive oil on the salad.

    It was all so tasty.

    And that wasn’t it.

    Dessert was equally as healthy. Cottage cheese topped with more fresh vegetables! Yes, vegetables. For a tasty savory treat. With each bite there was cucumbers, red peppers, and hemp seeds. The cottage cheese was seasoned with pepper and sea salt.

    If you’re in New Jersey, come one, come all…

    I’ll be giving my presentation “Healthy Pasta Alternatives” at Vauxhall Public Library in Vauxhall, New Jersey.

    It’s free, but you must call the library to register, as we’re capping it out at 30.

    There will not only be SAMPLING, but there will also be a free raffle/giveaway.

    One lucky attendee will win a variety pack — a basket full of healthy pasta.

    This is what makes all my lectures and presentations so much fun! Audience participation, and at least one lucky person goes home with something every time.

    Though let me warn you, finding out what an actual portion size of pasta may disappoint you! But if you do portion control with healthy pasta, such as brown rice, and fill the rest of your dish with fresh vegetables, trust me you will not feel deprived!
