Nachdem ich an einem der letzten Urlaubstage diverse koreanische Dips und Saucenbasis produziert habe, war heute Kimchi dran. Da ich beim Essen das hantieren mit ganzen Kohlblättern umständlich finde, schneide ich ihn immer klein (war auch ein Tipp meiner koreanischen Freundin). Jetzt habe ich also drei Würzsaucen, ein Glas mit Dashi, und ein Glas mit Kimchi auf Vorrat. Wobei das Kimchi noch circa 10-14 Tage braucht. #koreanisch #kimchi #dashi

Got my hands on dried shiitake mushrooms and dried kombu kelp, so now I can try making dashi! which i need to make miso soup! which i am entirely convinced is extremely delicious!

Spring Luxury
This is what a #spring luxury looks like. A combo of nature's gifts in a serving in #pasta.Sauge and cabbage sauted with #Japanese #dashi, #fuki shoots and #wasabi-na shoots boiled placed on top, now-rarely-found grandma's #umeboshi pickle atop.
In case one may thirst for tongue-tingling punchy spice, #homegrown peppers side-dished.
#Fuki-no-tō is bitter and removes "poison," #wasabi-na tastes like #wasabi, akin to #daikon and #karashi-na.
Nothing like spring luxury. -

#Lunch today was a #StirFry of grilled #tofu, #broccoli, white onion, and green onion. I served this over some #Thai wheat #noodles that were fried and dressed with soy sauce the drowned it all in #vegan #dashi broth.
Delicious doesn’t start to describe how good this was!

Going to make some mashed potato and raspberry sauce #BanChan - I ate this at the Stoneage #Korean BBQ in West Ryde and can't get it out of my head. No cream or butter, but thinned out with #dashi #TestKitchen
