Hurray for #cpdf (Coherent PDF Command Line Tools).
#Tolino, the German ebook/paperback publishing platform, requires a Bleedbox and a 3 mm Trimbox to be defined when submitting the PDF cover for a paperback book.
One of the few remaining reasons I had to fire up Windows was so I could start FoxIt PDF Editor, spend five minutes remembering how to find the Crop PDF options and then make the change.
cpdf lets me add them to the PDF from the command-line (or now a small Bash script)..
