It’s one of our various Italian traditions, in this case attributed to my paternal grandmother’s ancestors’ region, because she was born on New Year’s Eve. (I also interned in the #Langhe & #Roero region of Piemonte, aside from Florence).The recipe includes red wine, like #Barolo, plus a touch of #chocolate, vegetables for the stock that’s reduced to a rich sauce, as well as a small amount of honey, vinegar, tomato sauce, pepper, and juniper berries.
Lentils include a basic soffritto, pepperoncino, rosemary, and some of the lamb sauce.
#Wine is a #California vintage 2019 Cabernet Sauvignon from the Santa Cruz Mountains appellation by our local Mount Eden Vineyards of Saratoga here in County of Santa Clara, California, one of the smaller cities surrounding San Jose.

Here is a lamb shank drowned in red wine for two days with herbs and vegetables; whereas it’s then seasoned and browned in the pan and cooked in the wine with a bit of chocolate, tomato sauce, honey and a few other herbal notes. -
