#Kefir batch wrapped up. Got a good routine down now and consistently good results.
Just checked my old toots to see it was last July that I started to explore this beverage and fermenting our own from the big lumpy grains.
I've made yoghurt for decades but am only seven months into the kefir journey. I think my frequency is currently about every 15-20d for kefir and maybe 20-25d for yogurt.

Went to one of the #farms to buy #eggs. They also had #yoghurt today so I took some of that as well. I don't like unflavored yoghurt from the supermarket, but fresh it's great. The two are incomparable! This is why I buy food at the farms. You won't find anything more #fresh and #local 😍🥰.
On the way back, I saw some sheep chasing a cat out of their field. Never seen sheep this angry 🤣.

岩泉ヨーグルト
以前、飲み会の時に会社の大先輩が「最近はいつもこればかり買っている」と言って教えてくれたのですが、岩泉ヨーグルトという岩手のヨーグルトがあります。これは近所にあるこだわりスーパーマーケットのヤマダストアーで扱っていて購入することができるのですが、定価では1Lで1030円となかなかの値段で、私が普段買っている明治ブルガリアヨーグルトの2倍以上の価格になるためそう頻繁に購入する気になれません。
しかし、ヤマダストアーには毎週木曜恒例ヨーグルト2割引というのがあって、その名の通りのものなのですが、この岩泉ヨーグルトも対象になっています。今日妻が覗いてみたところ、賞味期限が近いためさらに2割引きになっているものを見つけたということで、この岩泉ヨーグルトの加糖のタイプを購入してきたので、私も夕食後に早速食べてみました。
岩手の厳選した原料乳からつくられた、低温長時間発酵のヨーグルトです。一般的なヨーグルトの3～4倍の時間をかけ、33～35℃の低温で丁寧に発酵。もちもちした粘りのある食感と、生乳のこく深い味わいが特徴です。添加物を一切使わずに、おいしく安全に仕上げました。家族みんなで食べられる便利なファミリーサイズです。
商品説明には上記のように書かれていますが、低温長時間発酵というところがポイントで、だからこそ手間とコストがかかっているのでしょう。食べてみた感じは酸味が穏やかで、確かにもったりした食感があり、生乳の甘い香りが感じられました。普段食べているブルガリアと比べるまでもなく、高級感のある味わいです。加糖でも甘味はかなり控えめで、後味もさっぱりしていて、ここにフルーツなどを足してもよく合いそうです。
私は経済的な余裕がそこまであるわけでもないので、今後ヨーグルトはこれにする！というのはちょっと贅沢に感じてしまいますが、確かに価格相応の良さがあるようには感じました。ただ、縦長の容器に入っていてちょっと取りづらいのが難点ではないかと思いますが、なぜあえてこのような容器にしているのでしょうか。明確な理由はわかりませんが、密閉できるというのが一つの理由のような気はしますが、最後に残ったものを絞り出せるというようなメリットもあるのかもしれませんね。

Liquorice Yoghurt, what could possibly go wrong? 😁🤔 It's actually tasty AF, but it's obviously an acquired taste. I have issues with pre-sweetened ... well, anything ... but this was very nice!

Looks like I'm officially too old for Yo-chi. Guy behind the counter asked if I'd ever been to Yo-Chi as if it doesn't work like every frozen yoghurt bar in the history of ever.
I mean he's not wrong - just realised I've been eating fro yo since the 80s!

Was on a train. Sent my friend a pic of my face when I realised that the person next to me really *was* going to eat the *entire* 1 kg tub of 10% Greek yoghurt that he'd fished out of his rucksack 10 minutes earlier.

Started a batch of #yoghurt and of #sauerkraut just before supper. Don't stand still too long around here or I might ferment you.
The toughest part of sauerkraut is massaging the salt into the shredded cabbage if the cabbage has been in the fridge. Very cold on the hands by the time you're done. Ouch!
