  1. You ever have one of those days where you try something new in the kitchen, and end up just hitting it OUT OF THE PARK somehow? That was today for me.

    I had a ton of lentils in the fridge that needed eating up, so I processed them into veggie "meat" balls, fried them up, and had them with leftover naan and a little plain yogurt. The bowl on the bottom here has a kale/cabbage salad with ginger dressing, cut up halo mandarins, and pecans from my tree outside. It was amazing.

  10. @Ruth_Mottram Our standby is a #VegetarianCooking version of the 'miser's feast' found in a Welsh cookbook (but we are English).
    Cook onions and old potatoes in water til the potatoes begin to break up (we use a pressure cooker). Put in fireproof dish, add grated cheese (can add breadcrumbs) and grill til cheese is crisping. Surprisingly tasty and satisfying.
    Can vary with some herbs, stout, lentils etc. in the water, and in many other ways.
    I suppose it's semi-traditional.

    One a day.

    Some of them are dead easy (pizza/pasta anyone?), some of the countries are much harder.

  13. After 24 years of vegetarianism, I have finally found a #MeatPie #recipe that I can easily make #vegetarian and that tastes exactly like the meat pies I used to get as a kid back in #Australia at local corner shops.

    My meat eating Danish family have also finally gotten to taste a true blue, #aussie classic.

  15. Every time I cook a pulse for the first time in the #InstantPot I look at timings online, I always put it less time than it says, and somehow the pulses come out all mushy when I looked timing for "cooked but whole , ideal for salads". It's tiresome .

  17. Today's dinner: stuffed courgette flowers.

    I used pea protein mince, mixed with minced onions & garlic& some fresh basil, & seasoned with salt & pepper. The courgettes were then sprayed with oil & baked for 20 mins in a 180C convection oven.

    They were served alongside roasted potatoes (peeled, cubed, olive oil, salt & pepper, 30 mins in the oven) and some extra courgette.

    The difference in flavour between the two types of courgettes (our CSA farmer told us they were different) was remarkable.

  19. Last day of vacation means preparing the week lunches: salads with black eyes peas, endive, radish, spring onion, olives, sun dried tomatoes, & roasted carrots, bell peppers and cauliflower.

    Will be making some tahini dressing to go along with it.

  20. I made Char Siu Cauliflower from the Eat Voraciously WaPo Newsletter (gift link: wapo.st/3JC1s8t ), which required Hoisin sauce. Buying hoisin isn't happening in the local stores, so I found a recipe for which I had all ingredients (seriouseats.com/hoisin-sauce) and made it.

    The Char Siu Cauliflower was delicious and will be repeated. So that will use some of my home made hoisin sauce. Any other recipes that use hoisin?

  21. I've learned a lot more about cooking in the past few years, not only because the pandemic (although the it gave me a push), but just from a logistical standpoint. I'm work from home, and wifey has to drive over an hour to Phoenix every day (🙄).

    I think that she likes that I'm now able to cook better and more often. As soon as I'm off work here at home, I start thinking of/making dinner. That's another big advantage of wfh. I can't imagine her driving over an hour to get home then having to make dinner. It doesn't make sense. Even though she is a GREAT cook. She taught me a lot. Like what things go together, etc. She's vegetarian now and we try to eat semi healthy (cutting sugar and fat just when we can), so I try to work all that in. Using odd leftover ingredients sometimes, experimenting- it's pretty cool, actually. Sometimes you feel like a mad scientist. 🤣

    The most important thing probably to all of it is figuring out what ingredients you always need to have around, finding them at the best prices, and making sure you use them fast enough before they go bad- which is always tricky, especially with fruits and veggies.

    I used to hate cooking (all I did before was eggs or microwaved stuff, really) and I think I kinda still do hate the process and effort (I'm not one of those people who gets a lot of gratification from stuff I've cooked, I barely like food 🤣🤣) but I gather up the energy required, and I enjoy knowing that

    Having an air fryer has really helped, and I can't stress this enough. If you're on the fence, just get one. I use it literally daily. You can air fry all KINDS of things-- veggies, meat, it's incredible. Probably best not to totally cheap out on it though, as we've been through a few. Ours is a Ninja.

    I also set up a Trello board with a bunch of meal ideas, after people on here gave me great advice- if you want to see that, it's here!

    We do a little meal planning, as I also make her breakfast and pack her a lunch, as she puts on makeup/does hair in the morning, and again, it just makes sense. I don't need to look any certain way, I rarely leave the house!

    This one got a little long. Maybe I'll throw it on Substack eventually? I'm not super active there (yet).

    The kale had ras el hanout, sweet corn, passata and eggs added to turn it into a shakshouka like meal.
