Finally getting the base tomato sauce to the stage I like.
Used butter instead of EVOO for a silkier emulsion.
Sautéed red pepper instead of carrots or mirepoix as I find the sweetness profile more suited to tomatoes.
Three part fresh tomatoes and one part roasted tomatoes, with vines chucked in, reduced on high heat with tomato paste.
Put in as much shallot, garlic, anchovies, star anise, mandarin peels, and dried figs as unnoticeable in the final product.
Tinned cherry tomatoes to balance, brought to simmer, and reduced again.
Basil to finish. Left in oven to mature overnight.
