  1. @waldoj Did I already compare notes with you previously about whether you frequented Thai Siam, tucked in the woods in Nelson Co in the glorious days before Miss May retired back to Thailand?

    No Thai food we've had anywhere in the US has been able to compete with her recipes and home style cooking. The richest curries I've ever had.

    The wail of despair that went up in this area when she retired is still echoing off the mountainsides to this day...

  2. Speaking of food, the restaurant space in the building our loft shares a wall with has been empty since a bit before COVID started. There was a popular place there for years, but she decided to get out of the business.

    We’ve not had high hopes based on what’s generally popular in our area.

    To our abject amazement, a Thai couple with restaurant experience from NJ have moved to our small Va town and are about to start serving one of our favorite cuisines. We’re quite jazzed.

    Chicken, pork, and prawns tangled in silky rice noodles and set eggs, in a bright sauce of lime, fish sauce, and a touch of sweetness.

    Finished with peanuts, cilantro, and bean sprouts. Sweet, salty, sour, savory — all at once.

    Silky rice noodles, ginger chicken, crisp bean sprouts, baby bok choy — all in a punchy lime, sweet chili + fish sauce dressing.

    The secret: a properly HOT wok, and chicken in batches so it browns instead of steams.

  7. Last week I made J. Kenji Lopez-Alt’s Thai-Style Tofu with Green Beans and Red Curry Paste (Pad Prik King) recipe from The Wok.

    It was a perfectly good pad prik king, but I think I will stick with Hot Thai Kitchen’s recipe. 4 stars ★★★★☆

  9. Satay chicken doesn't have to be in a stick

    I recently tried making a steak style of satay chicken. Just get the chicken in the paste (my thai lobo has both the paste for meat and dipping)
