After thirty years of treating "where does this run" as a question of latency and cost, I'm moving jcoffey.dev and coffeylabs.org to Germany and my mail to the Netherlands.
It'll be slower, it'll cost more, and I get to rebuild sender reputation from scratch. I priced all of that before committing.
Why anyway: the planned cutover beats the emergency one, every time. This is that instinct, one level up the stack.

So, it seems to come down to a choice of two:
#mailcow - completely open source, but many many docker containers which I absolutely despise.
#stalwart - One binary, does everything, open source and Enterprise and sufficiently not US based to matter.
Tried setting each up. mailcow - took about an hour of fiddling, tweaking and double-checking DNS records. stalwart - took ten minutes and did the lot.
Even for the Enterprise version, the licence is ridiculously cheap ($2/mailbox/year).
