While this might look unspectacular, this 32 cms ø pot by Le Creuset, which my brother gave me for my last birthday, contains a massive beef shoulder.
It was first fried in there in fresh rosmary and cane sugar, coated in mustard and pomegranate syrup.
When browned more than half a liter of soy sauce, apple vinegar and Algerian olive oil were added to bring the heat down. Then a massive amount of very rought cut onions, celeriac, brown mushrooms and carots we're added - among other things (choose yourself).
This has now already simmed for four hours and will soon rest in itself over night cooling off.
Tomorrow noon I'll add a whole lot of potatoes, at last adding fine-cut celery stalks and fresh parsley.
The taste bomb should be ready around 16h, when a friendly visitor from Barcelona will arrive. Salud!

P.S.: As soon as I find massive blocks of vegan protein I'll happily try that with those. Btw this pot is amazing. You can do everything on top of the stove, and it will continue to simmer on even the smallest gas flame here. There is no reason to do this in the oven - the heat dispersion and containment is completely amazing. Cast iron with a ceramic coating. No bloody teflon, PFAS or whatever non-stick chemicals involved!
