I used to think I disliked sandwiches.

I melted the butter and mixed it in with the hashbrowns evenly before they went onto the pan.
I also noticed at Waffle House they would pile the hashbrowns on the griddle like a little mountain. So I tried that today and wow it really does work. The insides are steamed soft and fluffy and you still get crispy edges.
What you want to avoid is “flattening” the hashbrowns. This pushes out the air inside the hashbrowns and turns the whole thing into a potato cake.

Accidentally made an INCREDIBLE taco salad.
All the basics — ground beef (85/15, I like fat), green leaf shrettuce, cilantro lime rice, pico, avocados, shredded Mexican cheese, and a cilantro lime dressing that really killed it.
It was so good I forgot to add heat 😂

Really easy to pull together on a week night. As with any steamed fish, fresh is best. If you don’t plan on cooking it the same day you buy, just buy frozen.

Cross-cut pork ribs in a fermented black bean sauce.
Off cuts can go a long way. This was about $7 worth and fed my wife and I quite handily over rice.

年糕 (Nian Gao) is a traditional glutinous rice snack eaten around Chinese New Year.
A mix of glutinous rice flour, sugar, and starch is steamed for about an hour. We also added Pandan and coconut milk to this one for fun.
The result is something like a hard mochi. It’s usually served pan fried so you get a crispy outside with a slightly chewy, gooey inside.
