Je les prépare selon une méthode ancienne, à la cendre. C'est juste génial, ça les désamérise en 8 jours, au lieu de les faire tremper 3 semaines à un mois dans de l'eau en la changeant tous les jours.
Ensuite, on rince et on fait tremper plusieurs jours en changeant l'eau, jusqu'à ce qu' elle soit claire. Puis, mise en bocal avec saumure.

For this you will need:
- gloves (as olive juices can stain your hands for days)
- a bucket
- a chopping board and sharp knife

As I'm still away from my lovely kittehs, this #Caturday features a repost of when #RubiaTheCat was on inspection duties to make sure I am doing a proper job cutting each olive to be brined individually before submerging them in fresh water.

I am wearing gloves as the olive juices can stain skin for days.

Once done the water needs changing daily to remove the olives' bitterness before they can be brined and jarred.

As it's #Caturday here's my contribution to #CatsWithJobs:

#MiniTheCat is doing the visual inspection of our newly harvested and pressed #OliveOil, just before we took over with the other sensory tests.

I'm very pleased how this year's oil came out (very fruity with just the right amount of sharpness in the throat), even though the quantity was a lot lower than previous years.

These are the '23, '22 and '21 pressings. The new one will clear up as particles settle down.
