I made #strawberries and #cream custard #pie From almost-scratch. The graham cracker crust was on the bargain shelf at #heb.
The strawberries were freeze-dried and blitzed in a blender, but gulf coast air is wet enough (70% relative humidity, y'all) that they started clumping while they were blitzing. Next time I'm adding a couple scoops of filling to the blender. I'd've done it this time, but I'm recovering from surgery and my stamina is shit. The standing and stirring constantly was super taxing even though it's been a week and a half.
Tomorrow, I'm making enhanced whipped cream topping (Two parts cream, whipped like you normally would + one part softened cream cheese whipped with equal volume of sugar to the weight of cream cheese, so 4 oz of cream cheese to 1/2 cup sugar. After you've beaten both, fold them together. This is easy to pipe, and doesn't weep in warm weather. I don't remember where I learned this.

Ingredients
- 2 large egg yolks
- 1/3 c sugar
- 2 Tbsp (1/8 c) cornstarch / cornflour
- pinch kosher salt (about 1/4 tsp or 1/8 tsp table salt)
- 2 c milk (any kind, I used whole dairy)
- 2 Tbsp softened butter (I used unsalted store brand)
- 1 tsp vanilla (double if your vanilla is weak)
- 20 g freeze-dried fruit, blitzed into a powder (optional)Preparation
1) In a heatproof bowl, beat the egg yolks a bit with a fork or tiny whisk. Set aside.
2) In a medium saucepan, whisk sugar, cornstarch, and salt, then gradually whisk in the milk.
3) Heat over medium, stirring constantly until thickened and bubbly.
4) Continue stirring for about a minute, then remove from heat.
5) Slowly whisk about half of the milk mixture into the egg yolks, then whisk the egg mixture into the pan.
6) Return the pan to the stove and continue to cook, stirring constantly, until the mixture thickens again, plus about a minute more.
7) Remove from heat and stir in butter and vanilla, and powdered fruit, if using.
8) Pour into serving dishes or pie crust. Cover with cling wrap, pressing it onto the surface to prevent skin from forming. Refrigerate for an hour or until chilled. -

I wonder if there was an explosion at the Jimmy Dean link pork sausage plant, because #HEB has been out of it for the past 2 weeks. Not even an empty spot in the display case where it would've been (otherwise that'd indicate online orders buy it all up before I get there). But then again HEB does that when they can't order products to carry at the price they want. This is the future, and the future is now, I guess.
