Making #gravlax for holiday #smorgasbord action. Cured salmon with spices and dill.

I'd include a pic of the preparation, but I suspect last year's results aren't too far back in the hashtag history. 😂

Gravitas is the quality of being weighed down with #gravy. The mass of the #gravy contributes to its #gravity. Salmon that is cured with #gravy and sugar is known as #gravlax. This process was invented by Dr. Wave E. Greyvee, of the Poutine Institute of Curdistan.

I usually make #gravlax this time of year. This batch turned out nicely.

Gravlax salmon with juniper, spruce tips, dill, and a pinch of sugar, ready for salt and lemon slices. Then off to the vacuum sealer and a week in the fridge.

I have #sourdough starter 'Stewart' ready for breadmaking but forgot to get my rye-specific starter "Gary" ramped up, and he's prob not been fed for a month so he will be slow.

Perhaps rye will have to wait until tomorrow. It is a necessary item for the cured #gravlax salmon for our Xmas Eve feast.
