The homemade granola bars for New Recipe Saturday are setting for a couple hours. I tried some of the mixture. It's pretty good, but I don't think I'd use honey next time. Just more brown sugar. My mom tried the mixture and said we could use more butter next time. I think they're very good though! I can't wait to try them after they set. I'd give this recipe an 8.5 out of 10!

CW: Cooking with picture; granola bars
My Fedi craft club project was granola bars! I made a bunch last year and when it got hot I stopped making them then forgot about them. But my wife’s going on a trip tomorrow and wants some to take with her.
I learned to double the recipe last year to get better shaped bars. I mashed to forget one of the ingredients, puffed rice cereal, so I baked this longer to account for the moisture. I added coconut oil and think it’s going to help them stay together better. I added a touch of cardamom too and the syrup tasted amazing!
I use oats, pecans, red walnuts, pistachios, dried cherries, and dried wild blueberries. Agave, almond extract, peanut butter, coconut oil, kosher salt, cinnamon, and cardamom.

@Unabart It's based on this recipe, but I substitute peanut butter in place of butter (which makes them vegan) and I only add in desiccated coconut.
