We had an enormous amount of carrots on hand, also some nice celeriac and onions, so we made a giant batch of #mirepoix. (It’s called a white mirepoix when using #celeriac rather than celery.) About half of it, we are going to lacto #ferment in a 3.5% brine, some we’ll freeze, and the rest we’ll use up as is in the coming days. The fermented stuff is terrific in stir fries. #HomeCooking #FermyLab
