Restarted my Pixelfed server (sorry for losing your comments!), and this time I've cleaned up empty title fields in the Instagram export json file before importing, and I've started at the first photos.
(Also, note to self: give the queues enough time to process everything!)

As I am the admin of my own self hosted instance, I could expand the total number of imported instagram posts allowed.
Too bad I can only run them 100 at the time (caching takes a while), but slowly I'm getting my photos loaded.
