Had fun embracing the #EBTSC this weekend, a blast from my past: Pineapple Upside Down Cake! Used one of the suggested sources, RecipeTinEats, but had fun perusing many on-line versions. After it was in the oven it struck me I might still have a copy of the one I used in the 60’s-70’s (I did!). Not the prettiest, but tasted naughty enough. Subbed cocktail cherries for maraschino, and dark brown sugar which made the whole thing kinda dark.

The cake flipped on the first try without a struggle, and No Fruit Left Behind. I’m happy with the outcome (pending the taste test later)

Thirty-five minutes later, the cake is out of the oven. The toothpick came out clean, so it is officially done! Now waiting for it to cool a bit before I try to flip it out of the skillet.

Will probably aim for tomorrow. Good chance I will run with whichever rendition looks easiest, but might glance at some cookbooks on the shelf and see if anything stands out.

Eating the single remaining pineapple ring in the can while I’m waiting.

First phase done — reduced the pineapple juice, made a brown sugar syrup in the bottom of the pan, then artfully arranged pineapple rings and maraschino cherries into a sort of doleful benzene ring formation.
When I poured the batter gently over the pan, the slow wave of batter flowing out from the centre dislodged all the external cherries, and they had to be reset into place by hand.
It’s all in the oven now.

Okay, starting with the mise en place — as I pull out all the ingredients I realize what I’m missing (which is why I do this first!). No rum, but it’s optional anyway. Will use water. No buttermilk, but I can do my usual substitute for that — putting a teaspoon of lemon juice into a measuring cup and filling to a half cup with milk. Other than that, we’re all set.
I bought maraschino cherries for this recipe but honestly I despise them. Will be giving away the rest of the jar.

Okay, diving into the #EBTSC project. As an extra challenge, I'll try a fresh pineapple, and see how that goes.
Oven is pre-warming with a baking stone in place too.

I've tried to select recipes that don't have horrible advert-infested web links, so you can click thru without fearing the typical big life-story post with a recipe hidden a hundred scrolls below.
Boost the invite if you can, and bake along if you like, or just sit back and watch the cakes go by as your tummy makes FOMO rumbles. 😂

The rules for EBTSC are basically just bake your version of the target cake this weekend (May 23-24).

The February event was a surprise success. So by popular request, a quarterly event is the plan, with a cake bake for each season.

Sneak peek - Next weekend (May 23-24) it's another "Everybody Bakes the Same Cake" event!
With the unexpected success of the first, a quarterly schedule sounded appealing to many of you.
With my original spontaneous invite, what I thought would be just me sharing lonely toots about a weekend cake bake ended up with twenty or so participants!
Watch this space! I'm just clarifying the recipe links and will share tomorrow.

It may be a bit too soon for a second #EBTSC weekend, but it seems that an attempt at the *Wacky Cake* - a Great Depression specialty - might be timely for this month.

Made the shared recipe for Breton Cake tonight ---- this was really good!
Had doubts because the batter/dough seemed very dense. But in the end, very tasty. Made with tangerine marmalade. Otherwise kept pretty close to the original recipe.
Next time will eat with some coffee, for sure.

Cryptic hashtag #ebtsc apparently means #EveryoneBakesTheSameCake. What a lovely idea! Looking at water mouthing cakes during breakfast & considering if I have time left to participate. Mhhhm, not today, maybe next time.

dense but not offputtingly so
very good with tea which makes sense, often served with strong coffee
wouldn’t want to make this that often because it’s a massive calorie load but I will be keeping this recipe ^_^

The Breton butter cake with marmalade turned out to be very tasty. It’s a ‘keeper’ recipe.
The mystery of the super thinness has been solved. I had forgotten that we’d been gifted a set of US pans at one point, and just grabbed one based on size imprinted on the bottom. Our oldest greased it and put in the parchment liner.
It was only after I’d finally got the cake off the pan that I clued in that it was actually a mislabeled 10” = 25 cm pan. 🤦🏼♀️.
Oh well, next time we’ll get it right.

The cake turned out super thin for us. The texture wasn’t very visible.
I tried to separate it from the bottom of the pan too early and it broke on one side. Our oldest was not impressed.

…the amount of cake batter seemed surprisingly small in relation to the large 20 cm springform cake pan.
…and the density seemed closer to cookie dough than cake batter. Perhaps we over mixed — but, ensuring that sugar is fully dissolved in GF batters with any rice flour in the mix, is always critical to avoid grittiness.
We struggled to cover the middle marmalade layer with the second half of the batter.

Okay so I decided to make a cake. I love to cook, but really rarely ever bake. Somehow the "Everyone Bakes the Same Cake" #EBTSC event from @ottaross appeared on my screen the same day that my Italian neighbor gave us a jar of homemade marmalade. IMO marmalade is mostly a total fucking barf, but this stuff was easily the best I've ever had so I figured I'd give it a shot.
I had planned on progress pics, but as I started the butter/sugar whipping I realized I didn't have any flour, which is a rather critical component to a cake, and that threw me for a loop. Quick run to the store and back into the throes...
It turned out quite well! Only took about 38 mins, not the 45 per recipe, and I got some nice caramelizing on the top and edges.The dough was a bear to spread, esp the top layer, so I had to use my fingers a bunch to cover the marmalade, which may have contributed to an underwhelming rise, but heck with it. It's tasty.
