  2. Hey. Random cooking tip here. I've always hated making a dish with a roux because it means I'm frantically trying to get the sauce set while I'm working on side dishes at the same time. Amazingly simple solution: make batches of roux in ADVANCE and freeze them in the portions you generally need.

    Cooking bacon? Save a bit of the grease and all of the fond, add in a little minced onion and garlic, add flour, you now have a bacon roux. Chicken, steak, same thing. Or just use boxed chicken/ beef stock and spend an hour making a big batch for the freezer.

    You don't have to thaw it. Just drop it in the pan at the step where you'd normally make the roux and it'll take care of itself.

    SAVED MY SANITY more than once already.
