Finished getting the Christmas cake ready today. It was the icing stage - the least enjoyable as far as I am concerned. It is so fiddly and I can never get it looking nice and tidy - especially around the bottom edges. One layer of cream-coloured almond icing, topped with a white icing layer. This year, for the first time, I used a silicon mat to roll out the icing on the kitchen bench, and a rotating cake stand to lay the icing over the cake. So much easier. Should have bought these two items years ago! Live and learn though.
