    ohh thats a hard one! I am quite fond of #Takahē (jointakahe.org) cause it lets each user account have its own domain name, so you can host one server but then each account "acts" like a single user instance to the rest of the fedi. And @dimkr's Tootik (github.com/dimkr/tootik) is also pretty amazing, it lets you post from inside a Gemini capsule and a bunch of other crazy features.
