One step I keep coming back to when I read through borscht recipes is the zazharka: grate onion, carrot and beet, fry them slowly in oil or a little pork fat until sweet and jammy, then stir in tomato and a splash of vinegar. Add it near the end, not the start. The frying is what makes it taste finished instead of raw, and the vinegar holds the dark red so the sweet doesn't win.

    Sour cream and dill go on the table at the end, never into the pot.
