"Room temperature" is a myth from cold European castles.
Modern rooms are too warm. Warm wine = flat, flabby, alcohol-forward.
The fix:
→ Light reds (Pinot Noir, Beaujolais): 15-20 min in fridge
→ Big reds (Cabernet, Malbec): 10-15 min in fridgeNot cold — just cool. Brighter fruit. Smoother tannins.

It's about sugar, not texture.
Yeast eats sugar → makes alcohol.
All sugar gone = dry.
Some left = off-dry, semi-sweet, sweet.The confusion: "Dry" often means tannic — that mouth-drying feel. But tannin ≠ dryness.
