Wednesday I made J. Kenji Lopez-Alt’s Miso Soup recipe from The Wok.
It was good! More miso-y than restaurant miso soup I’ve had. Unfortunately I’m the only one in the family that likes miso soup. 3 stars ★★★☆☆

Until the early Edo period villagers had harvested naturally growing algae by hand (in the 8thC it is recorded that some fishermen paid their taxes to the emperor in kelp), but farming allowed for cheaper and more readily available seaweed (a valuable food source in winter).

More sourdough discard crackers! Using a round pastry cutter for the shapes. Added ingredients this time: Wakame seaweed, 1 tablespoon nutritional yeast, fresh chives, chia seeds and chilli. I used mostly strong white flour plus some spelt and rye. #sourdough #crackers #baking #wakame #seaweed
