On the way home today I picked one of the last heads of elderflowers to put with some of the 3kg of gooseberries.
I don't usually find them in season at the same time here, so went to check the recipe.
The first two listed used elderflower cordial - full of sugar.
Finally found a real recipe...

Reminds me of the horrors inflicted on our children at various schools, eg first buy a packet of trifle mix or make cake with Rice Krispies and melted Mars bar.
No wonder so many young people never learned to cook when their parents were taught this in the 1970s and 1980s.
