La consommation de sucre remonte à environ 8 000 avant J.-C. en Nouvelle-Guinée, où les populations autochtones ont domestiqué pour la première fois la canne à sucre en sélectionnant la variété Saccharum robustum. Depuis la Nouvelle-Guinée, la culture de la canne à sucre s'est répandue dans toute l'Asie du Sud-Est, en Chine et en Inde grâce aux commerçants maritimes. La technique de raffinage chimique du sucre est apparue pour la première fois en Inde il y a environ 2 500 ans, et ce savoir s'est répandu vers la Chine, l'Iran et les premiers mondes islamiques.
« Au XIVe siècle, Chypre et la Sicile étaient devenues d'importantes productrices de sucre pour les Européens. Ce succès a encouragé certains riches à étendre l'industrie sucrière aux îles de l'Atlantique et aux Amériques. À [la fin du XVIe siècle], des quantités croissantes de sucre étaient importées des plantations sucrières ("engenhos") du Brésil. Ces engenhos exigeaient le travail forcé des peuples autochtones et, de plus en plus, des esclaves africain·es, qui travaillaient dans des conditions épouvantables pour broyer la canne à sucre, en extraire le jus et le faire bouillir à haute température afin de produire de la mélasse, qui était ensuite expédiée vers l'Europe dans de grands tonneaux appelés "hogsheads". Les débuts de l'industrie sucrière mondiale constituent une partie importante de l'histoire des débuts de la traite transatlantique des esclaves. »

Sniping koalas from helicopters: here’s what’s wrong with Victoria’s unprecedented cull
"Snipers in helicopters have shot more than 700 koalas in the Budj Bim National Park in western Victoria in recent weeks. It’s believed to be the first time koalas have been culled in this way. Le sucre ; une innovation qui donne envie :
"Dans « Slavery, Capitalism and the Industrial Revolution », deux chercheuses, Maxine Berg et Pat Hudson, replacent l’esclavagisme et le système des plantations qui en est issu, au cœur du développement de l’économie britannique du XVIIIe siècle. Et elles en font un élément déterminant de la révolution industrielle et des formes particulières que prendra le capitalisme britannique jusqu’à nos jours.

Encore dépassés de peu dans la déportation des Africains par les Portugais à la fin du XVIIe siècle, les Britanniques vont représenter, entre 1751 et 1775, près de 43 % du trafic d’esclaves contre 27 % pour les Portugais et 17 % pour les Français. À la fin du siècle, ils contrôlent encore 37 % de cet hideux marché.Ces déportations ont pour vocation de venir alimenter les immenses plantations des nombreuses îles des Antilles contrôlées par les Britanniques, comme la Jamaïque ou la Barbade, où l’on produit du café, du tabac et, surtout, du sucre. Ce dernier produit est le cœur de la machine capitaliste primitive amorcée par l’esclavage.
Le goût pour le sucre change tout
Les deux autrices expliquent ainsi comment ont été changés la consommation et les goûts des Européens pour que la production des plantations puisse bénéficier d’un immense marché toujours croissant. « À mesure que l’offre de sucre grossissait, il en allait de même de sa popularité », résument les autrices. Entre 1700 et 1783, la production de sucre dans les Antilles britanniques a quadruplé.
Ce phénomène s’est réalisé par deux canaux qui ne sont pas étrangers aux mécanismes actuels du capitalisme : l’attrait d’une consommation de luxe devenue abordable et l’addiction même du produit qui devient une « nécessité ».
L’imposition du sucre dans la consommation des Européens, y compris des plus pauvres au cours du XVIIIe siècle, est, en quelque sorte, la première victoire du marketing venant soutenir une production de masse. Elle rappelle que la demande et la consommation sous souvent les conséquences plus que les causes des choix productifs.
Mais ce que montre l’ouvrage, c’est que cette révolution culinaire destinée à assurer la profitabilité des plantations de canne fondée sur l’esclavage a eu un effet d’entraînement général sur l’économie. Elle a d’abord alimenté la demande de boissons destinées à être sucrées issues d’autres plantations esclavagistes (café, chocolat) ou du commerce asiatique comme le thé.
La folie du sucre a aussi favorisé d’autres secteurs, au Royaume-Uni même, comme la céramique, le commerce de détail, les intermédiaires financiers, les infrastructures portuaires. Tous ces secteurs ont, à leur tour, alimenté le reste de l’économie, notamment la production de métal et de minerais.
Ce que montre Maxine Berg et Pat Hudson, c’est l’effet d’entraînement de cette industrie à base esclavagiste sur la dynamique capitaliste et industrielle d’ensemble au Royaume-Uni. Cette dynamique n’est pas toujours immédiatement visible. Mais les autrices soulignent par exemple combien cette révolution dans la consommation a été un élément clé de la « révolution industrieuse », un changement notable de rapport au travail qui a permis la révolution industrielle.
Ainsi, notent-elles, « le désir pour une nouvelle variété de marchandises a amené des changements graduels dans les comportements des ménages ordinaires d’Europe occidentale ». Progressivement, pour s’offrir le luxe devenu atteignable du sucre, l’économie de subsistance va être abandonnée pour recourir au travail salarié. On va accepter de travailler davantage et plus dur pour acquérir ces biens devenus, selon les témoignages mêmes de la fin du XVIIIe siècle, des besoins essentiels.
En parallèle, le système de la plantation jette les bases de la future organisation capitaliste du travail et de la production. Le secteur sucrier à l’époque est une « synthèse du champ et de l’usine », un véritable « agro-business » qui ne ressemble « à rien de connu à l’époque en Europe ». Le jus de canne à sucre doit en effet être traité rapidement après la moisson pour produire des cristaux de sucre et de la mélasse qui, distillés, produit le rhum, un produit qui va vite devenir en vogue également sur les marchés européens.
Productivité, innovation, discipline
La plantation est donc un système intégré qui nécessite des innovations majeures pour l’époque afin de pouvoir organiser et améliorer la production. Le système de comptabilité mis en place va ainsi permettre de mieux calculer les rendements et, partant, de rogner sur les « besoins » des esclaves en termes de nourriture, de logements ou de vêtements pour en tirer le plus de valeur possible.Ces pratiques comptables vont jouer un rôle déterminant dans la naissance du capitalisme et dans son évolution. « La comptabilité standardisée a rendu possible la séparation de la propriété et de la gestion, une séparation qui est encore rare dans les entreprises britanniques et européennes plus d’un siècle plus tard », soulignent les autrices.
La comptabilité permet aussi de renforcer le contrôle de la force de travail et son intensification. Le système de la plantation confirme le constat que Marx fera un siècle plus tard : l’augmentation de la productivité va de pair avec la dégradation des conditions de travail. « Les régimes de travail vont empirer à mesure que s’améliorent le management et les technologies », constate l’ouvrage. Progressivement, les plantations des Antilles britanniques du XVIIIe siècle ressemblent aux grandes usines du siècle suivant, avec, en plus, la violence du régime esclavagiste où on fouette, on bat et on pend les réfractaires.

Les ports du commerce atlantique, principalement Liverpool et Glasgow, développent alors un hinterland qui fournit les biens manufacturés dont le commerce triangulaire fondé sur l’esclavage a besoin, notamment les textiles et les produits métalliques. La géographie économique du Royaume-Uni en est alors profondément modifiée.

L’argent de la métropole est dirigé vers les besoins des plantations, puis revient vers l’Angleterre et l’Écosse pour financer les secteurs dynamisés par le commerce triangulaire, mais aussi pour financer l’État.
