#milkbread — Public Fediverse posts

Some folks consider it a brioche, but while it’s an enriched bread, my milk bread is much less complicated than my brioche recipe. Or at least, I know what I’m doing with it so it feels less complicated.
Start with a milk roux: just hydrating some flour on some heat. It sounds fussy, but it’s the same thing as making malt o meal, cream of wheat or “farina”.

Another baking first for me: Japanese Hokkaido milk bread.
It is a recipe from Jack (Bake With Jack) Sturgess's still relatively new Baker's Club.

I am normally more into dark bread but this recipe looked (and proved to be) so much fun that I couldn't resist.
Mind you, it was more time-consuming than complicated and everything worked out fine - though the cat is glad I'm finally done baking.
