I am now officially obsessed with teaching a friend of mine how to create a good white roux. This French-style gravy is easy and inexpensive to make, and it provides a convenient basis for seemingly endless creativity.
Once you have a good white roux stored in the fridge, you only need to be unrepentantly imaginative and prepared to either blithely defenestrate the rule book or shamelessly plagiarize it.
